A Preview of Thanksgiving

This dish has become a Thanksgiving tradition in our house. In a similar vein to last month’s ravioli, It is sweet and savory and delicious.  We steam butternut squash until we can mash it and add in some breadcrumbs and grated cheese and some spices to turn it into a great filling for plump tortelli (a larger version of tortellini.) Next we create a sauce with sage leaves cooked in butter until they are crispy and aromatic. We’ll add in fresh cream and give it just a little bit of sweetness to round out the flavors. We’ll drizzle this over our cooked Tortelli for a delicious meal that tastes like the holidays at our house. We’re looking forward to sharing it with you.
