Alla Checca is an uncooked "sauce" which features a combination of bright, flavorful ingredients that is perfect for a warm evening! I start with virgin olive oil to which I add lots of plump chopped tomatoes straight from our farmer's market, minced, fresh garlic, and handfuls of homegrown basil. I turn my checca Californian by then tossing in an ample helping of locally sourced, perfectly ripe avocado. The smooth, creaminess of the avocado is the perfect foil for the tart perkiness of the tomatoes. 
We'll toss this with delicate vermicelli or "angel hair" pasta and finish it off with a dusting of imported Pecorino Romano cheese and the slightest pepperiness of chopped Italian parsley. You're in for a meal as bright and lively as the season it celebrates!
